An easy and delicious on-the-go breakfast from sports dietitian Julie Meek.
Creamy yoghurt, a crunch of granola and the sweet burst of blueberries –
this simple breakfast is full of flavour.
You can prepare these tasty granola cups ahead of time and keep them in the
fridge overnight, so you can just grab and go on busy mornings.
This recipe includes an easy homemade blueberry jam using chia seeds. These
tiny seeds are a rich source of omega-3 fatty acids, fibre and several
essential minerals, giving you an extra little nutrient boost.1
Ingredients
(Serves 1)
- ½ cup Greek natural yogurt

½ cup granola
- ¼ cup blueberry chia jam
For the blueberry chia jam
(Makes a big batch)

500g frozen berries
- 2 heaped tablespoons of chia seeds
- ½ cup water
Method
To make the blueberry chia jam

Add the frozen berries, chia seeds and ½ cup of water to a saucepan and
bring to the boil. Let simmer for 5 minutes.

Lightly squish the blueberries and then let cool for approximately 1
hour, and then refrigerate.
To make the granola cups

Place the Greek yogurt in the jar.

Place the granola on top.

Finish with ¼ cup of the blueberry chia jam.
